A washed process Tabi from Pedro Garcia Diaz in San Jose del Alto, Peru. Coffee is selectively picked before being fermented for around 36 hours, washed, and then placed to dry on tarpaulin mats where it dries for two weeks. Expect a crisp, clean and delicate cup with bright, buttery and tea-like qualities.
